View Full Version : Pork Chops with Apples and Bourbon

4 1 inch thick boneless pork loin chops, trimmed of fat
1 clove garlic, halved lengthwise
Pinch of dried sage leaves, crumbled
2 tablespoons unsalted butter or margarine
1/2 teaspoon tabasco
1 teaspoon lemon juice
1/2 cup chopped onion
1 medium cooking apple, unpeeled and sliced
1/3 cup bourbon or apple cider

Pat pork chops dry; rub each on both sides with cut sides of garlic and sprinkle with sage. Melt butter in a large skillet over medium-high heat and add Tabasco. When butter sizzles add pork chops. Cook 12 to 14 minutes turning once or until chops are golden brown on both sides and cooked through. Remove from pan, sprinkle with lemon juice, and keep warm. Add onion to skillet and cook over medium heat for 1 minute, stir in apple and cook 1 minute. Add bourbon and cook 1 minute longer, stirring often. Sppon sauce over pork chops and serve.
