1 tablespoon chopped onion
1 1/2 teaspoons minced garlic
1/2 teaspoon salt
1/2 cup olive oil
1/4 teaspoon tabasco
2 cups diced cooked chicken breast
1 medium tomato, diced
6 pitted black olives
1 tablespoon thinly sliced sun dried tomato
6 mushrooms, slicked
4 fresh bay leaves, chopped
1 head romaine lettuce
2 tablespoons balsamic vinegar
Combine onion and garlic in a small bowl; sprinkle with half of salt and mash into a semi-paste. Add remaining salt, 1/4 cup of olive oil, and Tabasco and mix well.
In a medium bowl, combine chicken, diced tomato, olives, sun dried tomato, mushrooms, and basil' pour olive oil mixture over top and toss to coat well.
Slice romaine crosswise into 1 inch wide strips and place in a large bowl. In a small bowl whisk together balsamic vinegar and remaining 1/4 cup olive oil and pour over lettuce. Toss to coat. Arrange on plates and spoon chicken mixture over the top.
