This is a recipe for Juicy Meatloaf from Flossie Johnson's cookbook.
2 lbs. ground beef
1 1/3 cups evaporated milk
2/3 cup rolled oats or 1 cup bread crumbs
1/4 cup finely chopped onions
1/2 to 2/3 cup celery, chopped
1/2 cup bell peppers, chopped
2/3 cup ketchup
2 teaspoons salt
1/2 teaspoon pepper
2-3 bacon slices, cut in half.
Mix ingredients thoroughly. Shape into loaf and put into greased pan. Put bacon on top and bake at 350 degrees for 1 1/2 hours. Baste occasionally. Serve hot or cold.
My note--I use bread crumbs with this recipe and it comes out just fine.
